How do I bake my Lento Melo for the best results?

  • First: let the meat quietly reach room temperature before you cook it. The smaller the temperature difference, the better.
  • Pat the meat dry and salt it lightly.
  • Use oils (for example groundnut, sunflower or corn), with a knob of real butter.
  • Let the oil and butter fizz over medium heat (in butter there is a little water). Do not burn: Make sure it does not discolour or smoke.
  • Bake one side 60 to 90 seconds, turn the meat and cook it again for the same duration. Do not prematurely turn. You can, however regularly pour hot oil with a spoon over the meat.
  • Remove the meat from the pan and pack it in aluminium foil. Leave for 3 to 4 minutes in a warm place: e.g. an oven at 60 degrees.
  • This is called 'resting' and is essential for the tenderness and juiciness of the meat. As mentioned previously ‘slowly does it…’.
  • Unpack the meat and add salt and pepper thereafter. Enjoy your meal!
